Dinner Favorites


My family was visiting from Owatonna this Christmas! We had a great time talking walks in the snow with the dogs, cooking, baking, playing games, and watching movies. My sister, Rebecca, is just two years younger than me, and my brother, Adam, is just one year younger than her. Both are enjoying a break from sports and school, and we had a lot of fun together! Matt had to work both Christmas Eve and Christmas Day, but we made due. Here are a few dinner favorites:

Stuffed Mushrooms

Large portabella mushrooms, stems removed
green onions, chopped
bacon, cooked and chopped into small pieces
Parmesan/asiago cheese mix, or whatever kind of cheese you prefer, shredded
*It worked great to put the mushroom caps in with the precooked ham--it only needed to bake for one hour. The caps can them be removed, placed in a separate pan, and stuffed with the green onions, bacon, and shredded cheese. Place back in the oven to let the cheese melt.

Stuffing

Simply add celery and chopped mushroom stems to any stuffing package for extra flavor!

Green Beans

If you're into spices, pan-sear the green beans in oil and add serano pepper and 'Mrs. Dash Extra Spicy' seasoning to taste. I think they taste great when the beans are just a tiny bit burnt and very spicy!

My mom's pumpkin dessert... sorry, can't give that recipe away!

Some fun things to do this weekend! My pics are seeing "Due Date" at the movie theatre in Harmony, painting Christmas ornaments at Potiche Pottery, seeing the "live nativity" at Lanesboro Methodist Church Saturday night, shopping and eating free cookies, and seeing "Little Women" at the Commonweal here in town! Oh, and watching the "Muppet Christmas Carol" at the St. Mane Theatre of course! How will I fit it all in?? Find your favorites and post a comment!

Reno loves the snow!

We bought Reno a cute little boy's hoodie and cut off the sleeves to make it work better for dogs. Reno LOVES running around and jumping through the snow... but he starts shivering after just 10 minutes! He is getting very good at finding his ball when I throw it into a big snow pile and he can't see it. VERY funny :) I may have to buy cross country skis and have Reno pull me around just so he gets his exercise!

The Month in Review-- November




We had a busier November than usual, and are hoping for the same this month. Trails are groomed for cross country skiing and the town is decorated for holiday festivities so make your reservation now!

Lovely comments from our guests this month-- but no one wrote in our room notebooks! There was just too much to do around here...wine dinners, theatre, the art gallery, free movie showings at the St. Mane, music, and plenty of bicyclers still around believe it or not! Things started to change right at the end of the month with an ice storm followed closely by two blizzards! Lanesboro is now sitting on about an inch of ice. But don-t worry-- the ice is buried in almost 2 feet of snow! Of course, the town is plowed (one advantage of living in a small town...my parents had to wait until the day after the blizzard to be plowed at all) and the rooms at the Inn are all dug out and cozy. Warm up winter with Lasagna!


I made my first lasagna last night! ...And it was so good, Matt ate it for breakfast too! :P

Lazy Lasagna

Ingredients:
1 pound ground beef
32 oz spaghetti sauce
1 pound cottage cheese
8 oz sour cream
8 uncooked lasagna noodles
3 packages sliced mozzarella cheese
1/2 cup grated parmesan cheese
1 cup water

Directions:
Brown beef, drain fat, and add spaghetti sauce. Heat through, stirring occasionally.
In a separate bowl, combine cottage cheese and sour cream.

Spoon half of the meat sauce into the bottom of a 13 x 9 pan. Place 4 of the noodles over the sauce, then cover with half of the cottage cheese mixture. Top with half the mozzarella, then half the parmesan, and repeat the layers beginning with the meat.

Cover the pan with foil and bake at 350 degrees for one hour; uncover, then bake another 20 minutes.

With a discussion afterwards about the
controversy at the University of Minnesota over
the showing of the film, led by Loni Kemp.
Troubled Waters, is a new documentary about
the Mississippi River, by the Emmy Award-
winning team that created Minnesota: A History
of the Land. This story traces the development of
America's bountiful agricultural heartland and its
effect on the legendary river. Through beautiful
photography and inspiring narrative, the film
offers solutions to the river's troubles through

The Root River watershed is a part of this story. The
University of Minnesota’s Bell Museum of Natural
History produced the film over nearly four years,
telling the story of agriculture, pollution and
farming solutions to clean up the great river.
Learn about the turmoil at the University of
Minnesota caused when the film's scheduled
premiere and broadcast on Twin Cities Public
Television were abruptly cancelled and later
reinstated.
